We are a full-service catering company and we staff our events with the most capable of staff-members. We prefer and insist on a 1-10 ratio for our large events. This practice ensures the integrity of our product as well as our reputation of excellence. We also offer "staff only" events. Many of our clients are tremendous chefs in their own right, but dread the set up, clean up and tear down of their own events.
I took that advice to heart. I've been a chef for many years now and I eventually found my way to Italy - Positano, Italy on the Amalfi coast - to be exact. I went there to learn about the local cuisine, meet and be taught by Italian chefs and to discover the fundamentals of Italian cooking using only local and in-season ingredients.
