The journey began in 2003 during our travels throughout the Carolinas. It was there we discovered True Q in what is known as "The Cradle of Q" - famous for decades-old recipes, smoked in small roadside shacks by second and third generation pitmasters. We learned the low-and-slow secret to great barbecue and brought that rich tradition north to share with family and friends. After perfecting our craft on the competition barbecue circuit, we opened our first Old Carolina Restaurant in Massillon, Ohio in 2006.

Services
We're not looking for resumes filled with restaurant experience. We can teach anyone the tasks of the operation. But we discovered early on that you can't teach someone to be "genuinely nice." You have to hire it. We always enjoy compliments on our food, but we get a real kick out of compliments of our staff.
We don't break tradition. Old Carolina Barbecue Company is a tribute to the roadside shacks found throughout the Carolinas. And in the Carolinas, pork IS barbecue. So, whether it's whole hog, whole shoulder or the bone-in pork butts we smoke on-site every night, Carolina barbecue starts with real hickory wood.
Our travels throughout the Carolinas garnered recipes from third generation pitmasters. During those visits, we knew there was another key ingredient just as crucial to our success; genuine hospitality. So, when you walk through the door of any Old Carolina location, you are greeted by a smiling crew member ready to take your order.

Got a ton of take out there yesterday for a family of 3 and it was excellent! The ribs held a true bite like they should. The brisket salad my wife got for $9 is a bargain in today's economy and will last for a couple meals. My boy devoured the mac and cheese. The vinegar slaw paired well with the pulled pork on sandwiches. The only thing we didn't try was the chicken but I will definitely be back. It's so good as I am writing this review I am getting hungry for the leftovers in the fridge.

First time at Old Carolina BBQ. Ordered pull pork sandwich n fresh cut fries. Tried 2 sauces, original and screaming beaver(Lil spicy). having managed a BBQ joint in the Carolinas, I was quite surprised. Flavors were good, pork was fresh, tender and delicious. And how can you go wrong with fresh cut fries. Heather, the manager, was awesome, along with the rest of the staff. thank you for lunch today.

Tried this for the first time today. I ordered a pulled pork sandwich with fries and the vinegar style Cole slaw and a sweet tea. You order, you pay and you take a table. The service is fast. My pork came on a soft Kaiser roll- not hard and not dry. Nice start. I took my first bite- hmmm, the pork was tender, piled high, smokey flavor and.cold? It's 12 degrees outside!
I wanted hot. I also thought it'd be wet with sauce. Nope. I asked the woman at the front for a side of sauce. Oops, it seems I missed the bank of pumps for sauce and ketchup. Lots of choices but I opted for the Original sweet Molasses style. Smooth, sweet and just enough bite for my taste. Returned to my table and poured on the sauce. Piled on the slaw, slapped on the bun top and plowed right through a delicious, albeit cold, bbq sandwich.
I can only imagine giving this place a 5 star review. The fries were perfect and nicely seasoned. The style of slaw was perfect. They've even got a sink (table "side-ish"), for you to wash up at should you eat ribs. Paper towels by the roll on the tables. Solid table, rickety ladder-back chairs. Choose a booth if you're larger than an average sized woman.
I realized I forgot the baked beans. I ordered a side just to be able to review them too. I'm here, why not? They were hot, covered in sauce and bits of pork shreds mixed in. Really good but be aware: I think the beans are mixed. Dark red kidneys, white beans (navy?), and perhaps pinto or light red kidneys. Not your standard one type of bean baked beans, but very good nonetheless.
I may return for ribs but soon. I get hungry for bbq about once in a blue moon but when I do want it again, I'm coming here. I'll just ask for my pulled pork to be served hot next time. Honest review, no bull.

The only reason I am giving this business three stars is because the staff was super friendly. The chicken wings were too salty to even eat. The chicken breast was dry. I was unable to taste any smoke flavor on any of the meat. The only thing I would order again was the fries but I don't go to bbq restaurants for the fries.

This place was so clean and friendly. The food was bursting with flavor and the meat melts in your mouth. The environment has a down home feel too it and the workers are so helpful and fast. They nailed our order and kept checking to make sure everything was okay. I highly recommend this wonderful place. It hits the right spot. Thank you for a wonderful meal and experience.

UPDATE! We revisited Old Carolina after Trina the GM had reached out to us to give them another shot. We were very pleased with the food this visit! Everything was fresh and moist. The staff was amazing, Clay was extremely curtious! Thank you for reaching out and correcting previous concerns! Very average food. Nice atmosphere. If you're in a bind and really are craving some bbq this place may do. Most of the meats we had were dry (pulled chicken, pulled pork and brisket).
